Kohlrabi is one of the most versatile vegetables I have ever cooked! I do not peel it. I slice it thin and saute it in avocado oil with garlic, onions, and sea salt. I also roast it with carrots, onions, radishes, and turnips. I have made cole slaw out of it, grated it, added onions, and fried it for hash browns. It is sweet, tender, and great raw or dipped into your favorite dressing.
